Can anyone give me a simple/lay-man's explanation for:

hddd.ddddd°

hddd°mm.mmm'

hddd°mm'ss.s"

I think I know that : hddd°mm.mmm'

is what the coords are written in at geocaching, but what does it mean?

And if I have coords that are:

44 07 09.24 latitude 120 58 03.7 longtitude which of the above 3 do I plug it in to?

What WH said is perfectly correct. To take it a step further, you can easily convert from one method of display to another. In you example you can take the 9.24 seconds and divide by 60 since there are 60 seconds to a minute and you get 0.154. If you then add that to the minutes you get 7.154. So now you have 44° 07.154' which can be easily entered into your GPSr. To convert back take the decimal portion and multiply by 60.
