Crack Candy Ingedients: 1/2 cup sugar 3/4 cup butter (melted) Saltine crackers 10-12oz bag choco chips (semi sweet or milk choc) Cake pan lined with foil Heat oven to 350. Place crackers in a single layer, 5x6, in cake pan Mix melted butter and sugar till most of the sugar is dissolved. Pour mix evenly over crackers Place cake pan in oven for 5-10 minutes or till mixture is carmalized Take out of oven and evenly dump choco chips on top. Spread out and chocolate melts. Once all the chips have melted, place cake pan in fridge till choco hardens. Break into pieces and enjoy. I love this stuff. Quote Link to comment
+GATOULIS
Ok, I posted this again in an other thread, but since they are a kind of cookies..... Christmas honey sweets - (Melomakarona) These sweets are from the byzantine empire! No kiding! they were and are made only during Christmas! INGREDIENTS 48 servings 7 cup of All-purpose unbleached flour Extra flour for kneading 1 1/2 teaspoon of Baking soda 1/4 teaspoon of Salt 1 3/4 cup of Mild olive oil 1 1/4 cup of Sugar 1/2 cup of Cognac -OR- mavrothaphne wine -OR- ruby port 3 oranges; zested and juiced 4 teaspoon of Freshly ground cinnamon 1 1/2 teaspoon of Freshly ground clove 3/4 teaspoon of Freshly grated nutmeg SYRUP 1 pound of Honey; (1 lb = about 2 cups) 1 cup of Sugar 1 1-inch piece of cinnamon 1 Clove 1 lemon; zested and juiced 1 cup of Water TOPPING 1/2 cup of Shelled almonds 1 tablespoon of Sugar 1 teaspoon of Freshly ground cinnamon METHOD Start by making the syrup. Put the honey, sugar, cinnamon, clove, and lemon zest in a saucepan and add the water. Bring to a boil and simmer for 5-10 minutes. Add the lemon juice, then chill. To blanch the almonds, plunge them into boiling water for 1-2 minutes, until you see signs of their skins loosening. Then drain and slip or pop them from their skins onto a baking sheet. Toast them in an oven preheated to 350 F for about 10 minutes - just until they begin to color. Cool, then chop them very, very finely - if you do this in a food processor, make sure that the pulses are short, or the nuts could turn oily. Mix the ground almonds with the sugar and cinnamon and reserve. Sift the flour, baking soda and salt together. Put the olive oil and sugar in a large bowl and beat together - with your fingers like Andonia - or with a wooden spoon. Beat in the Cognac, the orange zest, spices, and juice from 2 oranges (about 1/2 cup). Then beat in the flour, a few spoonfuls at a time, until you have a malleable dough, adding more flour if it is too soft, and more orange juice if it is too stiff. Turn the dough onto a floured surface and knead for 10-15 minutes until very smooth. Pinch off pieces of dough of about 2 tablespons and form into flattened oval or lozenge shapes. Place them on an oiled or non-stick baking sheet. Bake in an oven preheated to 400-425 F for about 20 minutes, until brown. When they are cool enough to handle, dip them in the bowl of syrup for about 1 minute. Remove with a slotted spoon and place on a tray to cool. Sprinkle with the chopped almond mixture. just in case you want to see them..... OH NO!!!! WHO ATE THEM??????????????????? OUPS!!! They cought me!!!! Quote Link to comment

+Lemon Fresh Dog
Tomorrow is our Cachers Christmas event, so I made some cookies for it. These are a pretty basic cookie. 300g Flour 2 teaspoons Baking Powder 125g butter 100g sugar 1 egg vanilla essence of orange (shave some peel) mix the flour, baking powder and sugar. Heap it on the counter and make a "well" Crack the egg into the well, add vanilla and the egg. Mix and knead in the butter. Roll out the dough on a flour surface (fairly thin) Cut shapes in "pairs" (the photo is 3X the amount - NOT tripled, you have to do it 3X) One shape is the "bottom", bake it, spread jam on it, the other shape is the "top", place it on a wire rack and dust it with icing sugar. You can substitute other stuff for the jam too - I was planning on making a lemon filling (to go with my geo-nick), but I got lazy. If you want (and you should), cut a smaller "window" shape in the top cutout PRIOR to baking - you can see this in the photo for the center of the flower. Here at altitude, I bake at 335 degrees for 12-14 minutes. Just until the edges start to get brownish. As there is a lot of butter, spending time folding the dough will give a "flakier" cookie. Here is a close-up on one of my "extras" So you can see the jam "window" - Now that I've touched it - I have to eat it! Oh well ... Edited December 21, 2008 by Lemon Fresh Dog Quote Link to comment

+Sivota
The mailman brought my Nomad -Look Twice for Bikes- coin today. That is great, because it means I can put in a cache to travel. My brother is coming over at Christmas day. There is a new Christmas-cache in a manor nearby (almost in my backyard). If it’s in a save cache I will drop the coin there on Christmas day. What better way to start spreading the message of Bike-Awareness. I will let you now when it starts its journey. I have also got a (sort of rejection) today to my idea to give some lessons on Bike Awareness at High schools. I give some guest lessons on High schools on other subjects, so I wrote and presented a programme several month’s ago. I even arranged for a police-officer to come and support the lessons. The programme was approved of, but the schools won’t be able to fit it in until next school season. Well, I will be ready next September to go and give some Bike-Awareness lessons to teens (14-18 years) on three schools. I think it is still worth it. I simply tell the schools that I won't be coming in for the other lessons if I can't give the lessons on Bike Awareness. ( ). Have a save Holliday season everyone and be careful. (We are getting some awful news about the bad weather in parts of the USA) Marit Edited December 22, 2008 by Sivota Quote Link to comment

+Sivota
TB2QAEW; Todie's Wild Ride; Look Twice for Bikes Geocoin (NL). Activated and ready to be placed in a cache, but eh Roddy......... it is all in Dutch ( ). I decided to tell the story in Dutch because a lot of people overhere aren't able to follow the whole story in the Englisch language (there are allready three coins with Englisch explanations, traveling around). I have told the Dutch cachers, in their own language, about Tod's accident, how your project started and the goal of the Bike Awareness project. I have added some numbers about cyclers travic accidents (mostly children in Holland) and ofcourse some tips about: Starting a discussion and giving a could example on the road for adults, Not speeding and watching your mirrors for drivers and Make sure the lights on the bike are working and not clowning around for the cyclists. So, I hope it is allright with you. I will try to place this one in a cache on Christmas day. Marit Edited December 22, 2008 by Sivota Quote Link to comment

+Rockin Roddy
Surteb's info has been sent! Chuck, that works fine for me, my friend! It's also one of my pet peeves, not using the signal is dangerous for drivers and riders alike! KAboom knows how I feel about this, I am constantly pointing out those who neglect to signal!! Christmas is near, maybe a cointest is too??? Quote Link to comment
