Internet coverage needed?

You should place all of your locations in areas with good internet coverage, as the app needs to contact Geocaching servers to verify the “find code” (†) when the user enters it on their device. 
 

†: not strictly how it works but I’m not discussing that here.

Great advice @Hügh, it is best to create an Adventure in an area with good cellular coverage. An additional tip that may help, from the builder guide, states: "Tip - Not all players will have cellular data while playing the Adventure. To accommodate for this, set the Geofencing distance to a greater radius, allowing players to log them once they have WiFi accessibility." This can help with areas that have some coverage, but not great.

Wifi is not needed immediately to log a find. The app remembers you were there and you supply the answer later when you have WiFi or cellular access

I've done a couple Adventure Labs with non-existent Wi-Fi. This is true that the app remembers you were there, but when the stages of the adventure lab have to be done in order can you still proceed when you've been to the previous location, or do you have to provide the answer before you can proceed to the next location? 

 

In other words, when the adventure lab has to be done in a specific order can you proceed to the next stage when you've been to the previous location (but can't answer because of bad Wi-Fi) or when you've answered the question for the previous location?

No, you can't. You have to finish the previous location (so answer the question for that location, even when you're no longer at the location), before you can go to the next location.

This is another reason to not use specific orders for Adventure Labs by the way.
