Headed to Ireland Next May

My wife & I are planning about a 2 week trip to Ireland next year sometime in May and would appreciate any suggestions as to site seeing, places to stay (like countryside hotels or even renting a room at farms, the nontraditional places). I have the OSM map of Ireland that helps a lot.
