Is there a way to put all of my finds into a pocket query to keep track of mileage?

Do you mean the "Your Finds" query that can be found at the bottom of the Pocket Query page?

That seems limited to 1000 finds, and I want to see my finds in 2018 which is not in the first 1000 nor the last 1000

A "My Finds" pocket query returns all your finds, on both active and archived caches, and regardless of whether you have 1,000 or 10,000 total finds.
