You can grab a TON of caches easily in Celebration, though it gets pretty repetitive since a lot of them are bison tubes in trees/bushes, but there's a few nice ammo can hides along the boardwalks. You can rent a bike in town and make a day of it. My favorites are "West End Cache" and "A Bird in the Hand."
Shingle Creek Regional Park in Kissimmee is pretty close and has some good caches. "George of the Jungle" gets a lot of raves, but I looked for it four or five times and never found it haha
Lake Louisa is farther but has a lot of quality caches too, especially the ones by moparots.
If you want to find some REALLY amazing caches, go to Tampa for a day and find the caches by CacheMedics. They are astonishingly awesome.
