Christmas Recipe Cointest

G'day everyone! Or should I say good night? :)

 

Despite all of the recent cointests held I have yet to see the return of our 'Christmas Recipe' cointest so I thought I would like to take care of that!

 

Since we have moved to Australia I have found it very hard to find some Christmas spirit in my shrunken little grinch heart :) It is way too hot to decorate, it is way to hot to wrap prezzies, it is way tooo hot to bake! Do you remember how silly xmas lights and decorations look when the house owner (you know who you are) has left them up until June? You pretty much get the picture! ;)

 

So, one entry per person please: give me your BEST hot weather treat recipe, it doesn't have to be xmas related but that would be extra cool for me!

 

Recipes will be accepted for a week, maybe two and one winner will be judged by random drawing and another winner by recipe merit. This winner will be judged by io_sono_affamto, my 15 year old son who has chosen this Italian caching name which means 'always hungry'.....

 

Winners will get COINS!!! whoop! I'm feeling better already :(

Great hot weather Christmas treat.

 

You will need shaved ice (you can crush the ice in a blender)

 

Make up a package of lime KoolAid but only use 1.5L (or less) of water.

Make up a package of wild cherry KoolAid only using 1.5L(or less) of water

 

Fill a glass 1/4 of lime KoolAid mixture and fill glass with crushed (shaved) ice.

Finish with black cherry mixture.

 

You get a green and red sno cone sort of beverage.

Ok, here is a really refreshing christmas-related recipe:

 

Iced punch on cinnamon stem

 

400 ml of wine, red (for children or people who do not like alcohol, you take red cluster juice)

200 ml orange juice

100 g sugar, brown

1 vanilla bean (s)

2 pieces anise (star anise)

3 carnations

3 Cardamom - Capsules

2 rods Cinnamon

1 lemon (s), grated rind

4 rods cinnamon, as stem

 

Bring the red wine (or cluster juice) and the orange juice to boil with the sugar. Remove from heat and add the spices. Approx. 30 minutes to go. Then pour through a sieve and pour into small cups Freeze it between 3 and 4 hours.

 

Insert into each lightly frozen punch one cinnamon stick and freeze for another 4 hours.

 

To serve, set off the small cups and stick diagonally into glasses or coffee cups.

 

Prep time: 15 min

Rest time: about 8 hours

Difficulty: easy

Since you're in a hot climate, I thought I'd do a 'cool-down' drink recipe.

This is a low-calorie drink too.

 

Mixed Berries Energy Shake:

1 frozen peeled banana, sliced

1/2 cup fresh or frozen blackberries, pureed and strained

1/2 cup fresh or frozen blueberries

2 packets of sweetener (of choice)

1/2 cup light vanilla soymilk

1/2 cup lowfat plain yogurt

2 tablespoons toasted wheat germ, divided (optional)

 

Directions

 

1. Combine all ingredients except wheat germ in blender and process until well blended. Pour and serve.

Bloody hot there, eh? This will definitely have you not caring about heat. One word of caution, tho: if it's that hot, make sure you keep this stored in the fridge at all times.

 

Here’s my recipe, given to me by a treasured friend. Worried about fat content? Substitute nonfat milk and skip the cream. It’s not QUITE as good but it beats everything else by miles.

 

Bowen's Eggnog

6 eggs, separated

1 cup sugar

1 cup orange liqeuer (Grand Marnier recommended)

1/2 cup brandy (the best you can afford)

1/2 cup light rum (Appleton’s white rum, or better yet Appleton’s Extra even tho it’s not clear)

1 and 1/2 quarts milk

3 cups cream (whipped stiff)

 

Beat yolks till thick; add sugar gradually. Chill. In a separate bowl, beat whites gradually, adding booze. Chill for one hour in glass container. Stir together milk, whipped cream, whites mixture and yolk mixture. Store in fridge in glass container.

 

Notes:

 

* Don't use cheap booze. If you use cooking brandy, it will taste like cooking brandy. The higher the quality of ingredients the yummier this recipe is.

* If you're going for low fat, you can use lowfat milk and I've even accidentally left out the cream and this is STILL awesome.

* Store this in the fridge in a GLASS container, preferably with a lid. You may have to split it up into two containers, and the cream will insist on floating to the top. A thorough shaking will remix it.

* Your cat will probably demand to lick the mug. Don't let them. The litterbox consequences are horrendous.

* For those of you worried about raw eggs.....as long as you get your eggs fresh and keep everything cold, the sheer quantity of booze you're adding will pickle dadgum near anything. I've made this recipe for at least a decade now and have yet to see anyone get salmonella from it.

Get some soft whipped coloured sweeties - fruit puffs eg - slice them.

Crush 2 packs of malt flavoured biscuits, into crumbs.

Mix together with one can of Condensed milk. Should be evenly moist.

lay on plastic wrap. roll into log shape.

Chill for several hours.

 

slice, a colourful every sweet, and sometimes sticky treat.

Popular here in NZ.

:: Aileen's Peppermint Xmas Roll ::

 

Ingredients

* 1 packet chocolate ripple biscuits

* 1x 250 gram block Cadbury dairy milk peppermint chocolate

* 1 cup glace cherries

* 2 ozs melted butter

* 1/2 can sweetened condensed milk

* coconut

 

Method

 

Crush biscuits, chop chocolate and cherries into small pieces. Add butter,

condensed milk and enough coconut to make workable dough. Roll into balls or

log shapes and then coat with coconut and refrigerate on foil tray. Slice or

eat as desired- enjoy

i have two different recipes. the first id my favorite its called butterscotch confetti (cointest one)

 

all it is

1/4 cup butter or margarine

1/2 cup peanut butter

1 cup of butterscotch chips

8 oz (250g) small marshmallows

 

melt butter and peanut butter in a large sauce pan and stir in chips. cool until you can hold you hand on the bottom of the pot. add marshmallows and stir until all coated. pack down in a 9 x9 inc pan. than refrigrate.

 

if you want to used semisweet chocolate chips replace with the butterscotch chips than you have chocolate confetti

 

the other recipe is from my grandma.

 

1 bag a marshmallows

1 can of evaporated milk

some graham cracker crumbs

and jar cherries (as many or as little as you want)

 

all the marshmallows, milk and chrries in a bowl and stir. on a foil or wax paper add graham cracker crumbs. than add mixture from the bowl, make sure the mixture is cover in graham crackers. make a into a log, and put into the freezer until hardern. (we mad 4 logs with these recipe, 2 large, 2 small.)

Here is an Australian recipe. It might put you in the Christmas spirit.

:: Christmas Wreath ::

 

1 large packet of Chocolate Ripple Biscuits *

500 ml thickened cream (approx 2 cups)

1/2 cup castor sugar (optional)

vanilla essence

 

Decoration

 

maraschino cherries

mint leaves

christmas lollies (candies)

 

Whip the cream with the vanilla essence(and sugar if preferred) until thick

and standing in peaks. Place cream on a biscuit and add another. Continue

working biscuits into a circle. Once the circle is complete, cover with remainder

of cream and refrigerate.

 

To decorate place 3 or 4 mint leaves with 2 or 3 cherries at various

places around the wreath to look like holly. Fill the centre of the wreath

with christmas lollies.

Patricia says this can also be made to resemble a christmas tree

by the way the biscuits are arranged and a little imagination.

A cadbury's Flake bar can be used to make the tree trunk

 

* Chocolate ripple biscuits are chocolate cookies with a ripple

effect. They are quite crunchy.

Lemon Cheesecake

 

you need

200 grams of whipping cream

200 grams of philadelphia cheese spread

2oz sugar

juice from 4 lemons

2 sachets of gelatine

crunched up digestive biscuits

 

whip up the cream and then add the cheese, then sugar and juice. then add the gelatine and whip them all together.

put the mixture into 4 individual desert bowls and place in the fridge to set.

when set, sprinkle crumb topping and.............

 

eat.

 

very delicious, but only in small portions.

i suggested small portions because from personal experience, this cheesecake is even tastier and alot more richer and sweeter than normal cheesecakes

It was -30 degrees Celcius here this week Bernice. :P

You keep bringing up the heat down unda....a 60 degree difference. :)

Well it has warmed up this afternoon to a balmy -6 degrees.

 

To keep you cooled down, keep the malaria at bay and for the smallest of Christmas cheer - I suggest -

 

Large glass

Ice

Couple shots of good Vodka

Add Tonic Water and a wedge of lime

Top it off with a sprig of mistletoe. :D

Fruit Mince Pies

 

 

Preparation time: 45 minutes (allow 2-3hrs for soaking)

 

Cooking time: 15 minutes

 

Makes: approx 40

 

Ingredients

• 5 cups (750g) Mixed Fruit

• ¾ cup (100g) Slivered Almonds

• 1 ½ cups brown sugar

• Rind & juice of 1 small lemon

• Rind & juice of 1 small orange

• 1 ½ tsp mixed spice

• 100g butter, melted

• ¾ cup brandy

• 1 packet frozen shortcrust pastry

• ¼ cup milk

• ¼ cup icing sugar to decorate

 

Method

Fruit Mince:

1. Coarsely chop fruit & transfer to a heatproof dish.

2. Stir in sugar, rind & juice, spices, melted butter & brandy.

3. Cover & microwave on high for 4 minutes, stirring every minute.

4. Remove & set aside covered for 5 minutes, then chill for 2-3 hours.

 

To make pies:

5. Preheat oven to 180°C

6. Use a biscuit cutter to cut out bases & cut Christmas tree shapes. Press bases into non-stick pie pans.

7. Chop almonds coarsely in a food processor & stir into fruit mixture.

8. Fill bases with mixture & place tree shape on top. Brush with milk.

9. Bake for 15 minutes or until lightly browned. Sprinkle with icing sugar to serve.
