I'm in the same scenario -
I put all my DNF's on my watchlist, and then when someone logs it I know all about it. Rather useful to see if I'm not the only one having issues. (yes, I know you can use bookmark lists to do the same thing, I just don't.)

The notification setting for Premium Members does not do what you think it does, it actually emails you when ever any log type you choose is posted within X miles (you can turn that off) however you can't turn off log emails for your own cache. Also, you can't just say the cache isn't yours. I'm trying to change the geocaching icons on my 60CSx from the treasure chest to the found smiley (found) the DNF "smiley" (atempted, not found) and just the plain old flag for not attempted ones. Is there any way to do this on a Mac? I can't install Windows as I have no way of obtaining a copy...

Out of the manual: To clear the Found List: 1. Press and hold (for a really long time, something like 10 seconds) the SMALL button. You will know you have successfully cleared the Found List when you see a message that says “CACHE CLEAR”

Well to answer one of your questions, I use GSAK to load caches on my 60CSx, but since I don't own a Dakota, I don't know if it works with GSAK. -
I use the 60CSx, which does not support paperless, but the GC iPhone app does. So I use that for details, hints etc and the 60CSx to actually find the cache. I couldn't live without that combo...

That cache was hidden without a GPS at all, just using Google Maps for lookup the coordinates. I haven't had any issue yet.

You could use RunKeeper for the iPhone, it's a little different but it works for when I track myself when I go biking. -
Should not be used in finding the cache? I can use whatever I want to find the cache what are you going to delete my log if I find it with my iPhone? Really?

All of my caches are hidden with my iPhone, because I honestly don't need a GPS. I use the maps app to drop a pin on where I am, then email it to myself so I can see the coords on Google Maps or Bing Maps, then adjust the numbers so it is in the relative location of where I hid the cache. Some people have commented on "the coordinates were bang on" etc. iPhone 3G

Was this a parent cache, one with several caches inside for you to take and hide as a child of the cache? Or was it a cache where only one of the capsules had the log and the rest were full of "Sorry, please try again" notes.
