Besdies Geocaching - I am on a competition BBQ team. We compete in KCBS (Kansas City BBQ Society) competitions. The rib rub we use pretty often is called: magic dust and comes from the book : Peace, Love, and Barbecue
the recipe is:
MAGIC DUST
½ CUP PAPARIKA
¼ CUP KOSHER SALT
¼ CUP SUGAR
2 TBS MUSTARD POWDER
¼ CUP CHILI POWDER
¼ CUP CUMIN
2 TBS COURSE GROUND BLACK PEPPER
¼ CUP GRANULATED GARLIC (OR POWDER)
2 TBS CAYENNE
First remove the "silver skin" from the back side of the ribs. Sprinkle the rub covering the meat. (both sides). When it appears wet rub it in - with a messaging method.
We have found that a 3-2-1 method works well as a guideline. more of a 2-2-45 min for babybacks. Do a seach for details of this method or check out smokingmeatforums.com
